Step 1
In a small saucepan, pour the freshly squeezed grapefruit juice and heat over medium-high until it simmers. Allow it to simmer for about 3 to 4 minutes, or until the juice reduces to approximately 3/4 cup. Transfer the juice to a measuring cup and let it cool slightly before stirring in the grapefruit zest.

In a mixing bowl, whisk together the sugar, egg yolks, and whole egg until the mixture is smooth and well combined. Gradually whisk the warm grapefruit juice into the egg mixture.

Return the combined mixture to the saucepan and cook over medium heat, stirring constantly. Continue to stir until the mixture thickens to a pudding-like consistency, which should take about 8 to 10 minutes.
