Start by cutting the bison skirt steak into 1-inch wide strips, making sure to slice against the grain for tenderness. Place these strips into a resealable plastic bag, which you should set in a shallow bowl to catch any drips.

Now, let’s whip up a zesty marinade! In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, salt, oregano, and black pepper. Mix it well until everything is nicely blended.

Pour this vibrant marinade over the bison strips in the bag. Seal it up and give it a gentle shake to coat all the meat evenly. Pop it in the refrigerator to marinate for 2 to 4 hours, turning the bag occasionally to ensure every piece gets that delicious flavor.
