Step 1
In a large bowl, combine the coleslaw mix, chopped red onion, apple cider vinegar, olive oil, Creole mustard, white sugar, celery seed, salt, and ground black pepper. Stir well until all ingredients are evenly mixed. Set the slaw aside to let the flavors meld.
Step 2
Place the cod fillets on a clean surface. Sprinkle half of the blackening seasoning and half of the paprika over the fillets. Flip the fillets and repeat with the remaining blackening seasoning and paprika. Brush olive oil over both sides of the fillets to ensure they are well coated.
