Step 1
In a mixing bowl, combine the black beans, diced Roma tomato, red onion, minced jalapeno, chopped cilantro, lime juice, and 1 teaspoon of salt. Stir well to mix all the ingredients and set aside.

Preheat your outdoor grill to medium heat and lightly oil the grill grate to prevent sticking.
Step 3
On a clean surface, arrange the polenta rounds. Brush the tops with olive oil, then flip them over and brush the other side with olive oil as well. Season one side lightly with salt and ground black pepper.
Step 4
Place the polenta rounds on the grill and cook for 5 minutes. Using a spatula, carefully flip the rounds and grill for an additional 5 minutes until they are golden and slightly crispy.
Step 5
Just before serving, top each grilled polenta round with a generous spoonful of the black bean salsa.
