Step 1
In a large bowl, whisk together the vegetable oil, cider vinegar, water, and mojito lime marinade mix. Add the shrimp and toss to coat. Cover and marinate in the refrigerator for 30 minutes.

Preheat your grill to 300°F (150°C) and lightly oil the grate with cooking spray.

Place the onion rings and quartered bell peppers on the hot grill. Grill for 3 to 5 minutes on each side until they are tender and slightly charred. Remove from the grill and chop roughly on a cutting board.
