Cooking Instructions
Follow our step-by-step guide on how to make Grilled Tex-Mex Shrimp with Salsa.
Step 1
In a large bowl, combine the shrimp, olive oil, paprika, chili powder, and cumin. Stir gently until the shrimp are evenly coated. Cover the bowl and refrigerate while you prepare the salsa.
Step 2
Preheat your outdoor grill to medium-high heat and lightly oil the grate to prevent sticking.
Step 3
Grill the tomatoes, onion, garlic, and jalapeno for about 4 minutes. Flip the vegetables and continue grilling until the tomatoes and jalapeno are blistered, approximately 4 minutes more.
Step 4
Remove the tops from the tomatoes and discard them. Halve the jalapeno, remove the seeds, and discard the skin. Quarter the onion and squeeze the garlic cloves from their skins.
Step 5
Place the grilled vegetables into a blender. Add lime juice and salt, then blend until smooth. Add cilantro and pulse a few times until evenly mixed.
Step 6
Transfer the marinated shrimp to the hot grill and cook for about 2 minutes on each side, or until they are opaque and cooked through.
Step 7
Serve the grilled shrimp with the fresh salsa on the side.
