Step 1
In a large pot, heat the canola oil over medium heat. Add the chopped Scotch bonnet pepper, black mushroom bouillon cubes, chicken bouillon cube, seasoning bouillon cube, crushed red pepper, onion powder, kosher salt, black pepper, and ground thyme. Stir and cook until the bouillon cubes dissolve completely.
Step 2
Add the minced garlic to the pot and sauté for an additional 4 minutes until fragrant.
Step 3
Increase the heat to medium-high and stir in the frozen lima beans. Cook for about 4 minutes, allowing the beans to heat through.
Step 4
Pour in the coconut milk and bring the mixture to a boil, stirring until the color turns dark black from the mushrooms.
Step 5
While the coconut mixture is heating, bring 6 cups of water to a boil in a separate pot. Stir in the uncooked jasmine rice and let it boil for about 10 minutes.
Step 6
After 10 minutes, reduce the heat to medium and mix in the coconut milk mixture. Cook for an additional 7 minutes, allowing the flavors to meld.
Step 7
Lower the heat to low, place a clean dishcloth over the pot, and cover with a lid. Allow the rice to steam for at least 15 to 20 minutes.
Step 8
Once done, uncover the pot and serve the Haitian Black Mushroom Rice hot.
