Step 1
In a mixing bowl, combine the pumpkin puree, brown sugar, and pumpkin pie spice until well blended.
Step 2
In a skillet over medium heat, melt the butter. Add the thinly sliced apple, then sprinkle with white sugar and ground cinnamon. Cook for about 8 to 10 minutes, or until the apples are soft. Remove from heat and set aside.
Step 3
Heat another skillet over medium heat and lightly coat it with cooking spray. Place one tortilla in the skillet and spread a generous layer of the pumpkin mixture over it. On one half of the tortilla, layer some slices of Brie cheese and top with the cooked apple mixture.
Step 4
Fold the tortilla in half and cook for 2 to 3 minutes, or until golden brown. Flip and cook for an additional minute. Remove from the skillet and repeat the process with the remaining tortillas and filling.
Step 5
Allow the quesadillas to cool for 5 to 10 minutes before slicing and serving.
