Step 1
Drain the juice from the pineapple can into a small bowl. Mix in the ponzu sauce and sugar, stirring until the sugar dissolves. Refrigerate the pineapple rings and 1/3 cup of the juice mixture.
Step 2
Transfer the remaining juice mixture to a resealable zip-top bag. Add the sliced beef, seal the bag, and refrigerate for 8 hours or overnight to marinate.
Step 3
Peel the outer layer of the onion and slice it as thinly as possible. Slice the jalapeno into thin rounds, removing the seeds and ribs for less heat. In a bowl, combine 1/4 of the onion slices, jalapeno, lime juice, sugar, and a pinch of salt. Set aside to quick-pickle, stirring occasionally until ready to serve.
Step 4
In a bowl, mix together the sour cream and Sriracha sauce to create the Sriracha cream. Set aside.
Step 5
Heat 1 1/2 teaspoons of oil in a large pan over medium-high heat. Add the pineapple rings and cook, stirring occasionally, until they are lightly caramelized, about 3 to 4 minutes. Remove the pineapple from the pan and set aside.
Step 6
Add the remaining onion and oil to the pan, seasoning with salt and pepper. Cook and stir until the onion is softened, about 4 to 5 minutes. Add minced garlic and cook until fragrant, about 30 seconds.
Step 7
Drain the marinated sirloin from the bag and add it to the pan. Season with salt and pepper. Cook until the beef is browned, about 4 to 5 minutes. Carefully pour in the reserved pineapple juice mixture and cook, stirring until the liquid has mostly evaporated and the beef is coated in sauce, about 1 to 2 minutes. Remove from heat and stir in the pickling liquid from the onion and jalapeno. Taste and adjust seasoning if necessary.
Step 8
Assemble the sliders by placing the cooked sirloin on each bun. Top with the jalapeno slaw, a dollop of Sriracha cream, and a slice of caramelized pineapple.
