Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a large mixing bowl, combine the white sugar and canola oil. Beat with an electric mixer until the mixture is smooth and creamy.

Add the molasses and egg to the bowl, and continue to beat until the mixture is fluffy.

Gradually stir in the whole wheat flour, ground ginger, baking powder, baking soda, and lemon zest. Mix until all ingredients are well combined.

Using a small cookie scoop, measure out teaspoonfuls of dough and place them 2 inches apart on an insulated baking sheet. Flatten each dough ball slightly with a spatula.
