Cooking Instructions
Follow our step-by-step guide on how to make Healthy Slow Cooker Beef Stew.
Step 1
Start by placing the beef stew meat into your slow cooker. This is where the magic happens! In a small bowl, mix together the flour, salt, and black pepper. Sprinkle this mixture over the beef, ensuring each piece is well-coated. Next, add in the minced garlic, bay leaf, paprika, Worcestershire sauce, and chopped onion. Pour in the reduced-sodium beef broth, followed by the diced potatoes, sliced carrots, chopped celery, and the butternut squash chunks. Stir everything together gently, making sure all the ingredients are well combined and submerged in the broth. Now, cover the slow cooker and set it to cook on Low for 10 to 12 hours or on High for 4 to 6 hours. This slow cooking process will make the beef incredibly tender and allow all the flavors to meld beautifully. When the cooking time is nearly up, stir in the torn escarole. Cover the slow cooker again and let it cook for an additional 15 to 20 minutes, or until the escarole is tender. Once done, serve your delicious beef stew hot, and enjoy the comforting flavors!
