Step 1
In a large pot, combine the water and chicken thighs. Bring to a boil, then reduce the heat and let it simmer until the chicken is tender, about 30 minutes. Skim off any scum that forms on the surface occasionally.
Step 2
In another large pot, heat the olive oil over medium heat. Add the chopped carrots and diced onion, cooking and stirring until they begin to soften, about 3 to 4 minutes. Stir in the chopped garlic and salt, cooking for an additional minute.
Step 3
Transfer the cooked chicken and its broth to the pot with the vegetables. Add the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot slightly ajar, and let it simmer for at least 1 hour, or up to 4 hours for deeper flavor.
Step 4
After simmering, remove the chicken from the pot and place it on a cutting board. Discard the skin, bones, and cartilage, then shred the chicken meat using two forks. Return the shredded chicken to the pot.
Step 5
Add the chopped broccoli, cauliflower, and optional zucchini to the pot. Bring the soup back to a simmer over medium-high heat, then reduce the heat to maintain a gentle simmer. Cook until the vegetables are tender, about 20 to 30 minutes.
