Step 1
In a large pot, combine the beef broth, chicken broth, and 2 cups of vegetable broth. Heat over medium heat until it reaches a simmer.
Step 2
While the broth is heating, place the remaining vegetable broth, fire-roasted tomatoes, tomato halves, onion, garlic, and chicken soup base into a food processor. Blend until smooth, about 1 to 1.5 minutes. Set aside.
Step 3
In a 10-inch frying pan, heat the grapeseed oil over medium-high heat. Add the fideo pasta and cook, stirring constantly, until it turns golden brown, about 2.5 to 3 minutes. Stir in the oregano and cumin.
Step 4
Using a 6-inch strainer, pour the blended tomato mixture into the frying pan, stirring quickly with a wooden spoon to prevent sticking. Cook for an additional minute, then discard any solids left in the strainer.
Step 5
Pour the fideo-tomato mixture into the simmering broth. Increase the heat to high and cook for about 5 minutes.
Step 6
Reduce the heat to medium-high, then stir in the diced zucchini and a pinch of salt. Cook until the fideo is tender yet firm to the bite, about 2 more minutes.
