Step 1
In a small bowl, combine the eggs, salt, cayenne pepper, parsley, marjoram, thyme, and white Cheddar cheese. Beat the mixture with a fork until well combined.

Heat the olive oil in a small nonstick pan over medium heat. Once hot, pour the egg mixture into the pan.
Step 3
Using a rubber spatula, gently scramble the eggs, moving them constantly and scraping the sides of the pan as needed. When the eggs begin to come together, reduce the heat to low.
Step 4
Continue cooking while stirring slowly but constantly until the eggs are very soft and slightly wet. Turn off the heat.
Step 5
Tilt the pan towards you and push the eggs to the bottom edge, tucking in the edges with the spatula to form an omelet shape that is moist but not wet.
Step 6
Return the heat to medium for about 15 seconds to form a light skin on the surface of the omelet. Carefully slide the omelet onto a warm plate and serve immediately.
