Cooking Instructions
Follow our step-by-step guide on how to make Herb-Stuffed Pork Tenderloin.
Step 1
Begin by preheating your oven to a cozy 375°F (190°C).
Step 2
Prepare the pork tenderloin by trimming away the flap of meat from the wider end and slicing off the last 2 inches from the narrow end.
Step 3
Chop the trimmings and set them aside for later use.
Step 4
Position the tenderloin with the short end facing you, and make a careful incision about 1 inch from the bottom, slicing parallel to the cutting board along one long edge.
Step 5
Stop about 1/2 inch from the opposite edge to keep it intact.
Step 6
Gently open the tenderloin like a book and make a few shallow slashes in the flattened meat, taking care not to cut all the way through.
Step 7
Cover this flattened masterpiece with plastic wrap and pound it to a uniform thickness of about 1/2 inch using the smooth side of a meat mallet.
Step 8
Once pounded, roll up the tenderloin, wrap it in plastic, and pop it in the fridge to chill.
Step 9
In a mixing bowl, combine the chopped pork trimmings, fresh parsley, breadcrumbs, currants, minced garlic, chopped rosemary, egg, olive oil, 2 teaspoons of salt, 1 1/2 teaspoons of black pepper, and a pinch of cayenne pepper.
Step 10
Use a fork to mix everything together until the stuffing is well blended.
Step 11
Unroll the tenderloin on a clean surface and spread the stuffing mixture evenly over it, leaving a 2-inch border on one long edge.
Step 12
Roll the tenderloin tightly from the opposite long edge, finishing at the 2-inch border.
Step 13
Secure the roll with kitchen twine and season the outside generously with salt and black pepper.
Step 14
Heat an oven-safe skillet over high heat until it’s sizzling hot.
Step 15
Add the tenderloin and sear it for about 3 to 4 minutes on each side until beautifully browned.
Step 16
Transfer the skillet to your preheated oven and bake until the tenderloin is slightly pink in the center, roughly 30 minutes.
Step 17
An instant-read thermometer should register at least 145°F (63°C).
Step 18
Once cooked, move the tenderloin to a plate and allow it to rest for 15 minutes before removing the twine and slicing into succulent pieces.
Step 19
Enjoy the delightful flavors and textures of your homemade stuffed pork tenderloin!.
