Step 1
Start by bringing the fresh blackberries and water to a gentle boil in a large pot. Allow them to simmer for about 15 minutes, or until the blackberries are soft and bursting with flavor. Once softened, remove the pot from heat and mash the berries using a potato masher to release all those delicious juices.
Step 2
Next, prepare to strain the mixture. Line a sieve with cheesecloth and place it over another large pot. Carefully pour the mashed berries into the cheesecloth-lined sieve, letting it sit for about 30 minutes. This will allow all the luscious liquid to drain through, leaving behind the seeds and pulp.
Step 3
Now, for the sweetening magic! For every half gallon of the drained blackberry juice, stir in 1 pound of sugar. Bring this mixture to a boil in a pot, cooking it for about 5 minutes until the sugar is completely dissolved. Don’t forget to skim off any residue that forms on the surface; we want our syrup to be clear and beautiful!
Step 4
While the syrup is cooking, it’s time to sterilize your jars and lids. Place them in boiling water for at least 5 minutes to ensure they’re clean and ready for your syrup.
