Step 1
Print and cut out 3-inch wide paper fortunes.
Step 2
Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with a silicone mat or parchment paper.
Step 3
In a mixing bowl, combine the egg white, sugar, milk, vanilla extract, almond extract, salt, and melted butter. Whisk the mixture until the sugar is fully dissolved.

Gradually add the flour to the mixture, whisking until the batter is smooth and falls off the whisk in ribbons.
Step 5
Scoop 1 tablespoon of batter onto the prepared baking sheet and spread it into a 4-inch circle using the back of a spoon. Repeat this step for a second cookie.
Step 6
Bake the cookies in the preheated oven for about 10 minutes, or until the edges are crispy and golden brown while the centers remain pale.
Step 7
Using a spatula, quickly lift the cookies off the baking sheet. Place a fortune in the center of each cookie, then fold the cookie in half, pressing the edges together gently.
Step 8
Bend the folded cookie over the rim of a cup or muffin tin, bringing the ends down on either side to create the classic fortune cookie shape. Allow the cookies to cool in the ramekins or muffin tins to maintain their shape.
Step 9
Continue baking the remaining batter in batches, shaping the cookies while they are still hot. Once completely cool, remove the cookies from the ramekins or muffin tins.
