Step 1
In a small bowl, combine the rubbed sage, kosher salt, dried parsley, crushed red pepper flakes, fennel seeds, ground black pepper, smoked paprika, ground coriander, and dried thyme. Mix well to create a seasoning blend.

In a large bowl, add the ground pork and the seasoning mix. Use your hands to thoroughly combine the ingredients until evenly distributed.

Shape the mixture into a log about 2 inches in diameter and 6 inches long. Wrap the log tightly in plastic wrap and refrigerate for at least 8 hours, or up to 24 hours to allow the flavors to meld.

Preheat your outdoor grill to medium-high heat and lightly oil the grate to prevent sticking.

Remove the pork log from the refrigerator and slice it into twelve 1/2-inch thick patties.

Place the patties on the hot grill. Close the lid and cook for 1 1/2 minutes. After that, rotate each patty 90 degrees and continue grilling for another 1 1/2 minutes. Repeat this process until the patties are cooked through and the juices run clear, about 6 minutes total. An instant-read thermometer should read at least 145°F (63°C) in the center of the patties.
