Step 1
Begin by preparing your 9x13-inch baking pan: lightly coat it with cooking spray and dust it with a tablespoon of confectioners' sugar to ensure easy removal later.

In the bowl of a stand mixer fitted with a whisk attachment, combine half a cup of lukewarm water with two tablespoons and three-quarters of a teaspoon of unflavored gelatin, stirring briefly to blend.

In a large saucepan, mix together one and three-quarters cups of white sugar, three-quarters cup of light corn syrup, half a cup of water, and a quarter teaspoon of salt.

Heat this mixture over medium-low, stirring constantly until the sugar dissolves, which should take about five minutes.

Then, increase the heat and continue stirring until the mixture reaches a precise 250°F (121°C) on a candy thermometer, roughly five more minutes.
