Step 1
To start your sourdough journey, grab a large container that will have plenty of room for your starter to grow.
Step 2
On the first day, mix together 70 grams of bread flour with 70 grams of filtered water.
Step 3
Make sure to cover the container loosely; this allows the gases produced during fermentation to escape while keeping dust out.
Step 4
Place it in a warm spot at room temperature, ideally around 70°F (21°C), and let it rest for 24 hours.
Step 5
On the second day, it’s time to feed your budding starter! Add another 70 grams of bread flour and 70 grams of filtered water to the mixture.
Step 6
Stir it well to combine everything, then cover it loosely again and let it sit at room temperature for another full day.
Step 7
By the third day, you’ll notice some activity in your starter.

Discard about half of it, which is roughly 140 grams, to keep the balance right.

To the remaining starter, add 70 grams of bread flour and 70 grams of filtered water.

Mix it all together thoroughly, cover it loosely, and let it rest at room temperature for another 24 hours.

From days four to ten, continue this nurturing routine.
