Step 1
In a small saucepan, heat the rice vinegar and white sugar over medium heat until just below boiling. Stir continuously until the sugar is completely dissolved.
Step 2
Place the chopped strawberries into a sterilized pint jar. Use a muddler or the back of a spoon to gently press the strawberries, releasing some of their juice.
Step 3
Pour the warm vinegar mixture over the strawberries in the jar. Wipe the rim of the jar with a clean cloth to ensure a good seal. Secure the lid and store the jar in a cool, dark place for about 3 days to allow the flavors to develop. Remember to shake the jar gently once a day. For a more intense flavor, you can let it infuse for a longer period.
Step 4
After the infusion period, strain the vinegar through a cheesecloth or coffee filter into a sterile bottle or jar. Seal the bottle and store it in the refrigerator.
