Cooking Instructions
Follow our step-by-step guide on how to make Homemade Sweet Pickle Relish.
Step 1
Begin by gathering a large bowl and combining your freshly chopped cucumbers, onions, and vibrant bell peppers.
Step 2
Generously sprinkle pickling salt over the colorful medley and pour in enough cold water to fully submerge the vegetables.
Step 3
Let this mixture soak for two hours, then drain it thoroughly using a colander.
Step 4
While the vegetables are soaking, take a moment to inspect six pint-sized jars for any cracks and check the rings for rust, discarding any that are defective.
Step 5
Immerse the jars in simmering water to keep them warm until you're ready to fill them.
Step 6
Donβt forget to wash new lids and rings in warm, soapy water for a pristine seal.
Step 7
In a sturdy stainless steel pot, combine cider vinegar with celery seed and mustard seed.
Step 8
Stir in sugar and bring the mixture to a boil, continuously stirring until the sugar dissolves completely, which should take about two to three minutes.
Step 9
Once dissolved, add the drained vegetables and bring the mixture back to a boil, which may take up to ten minutes.
Step 10
When it reaches a rolling boil, remove it from the heat.
Step 11
Carefully pack the hot relish into your sterilized jars, filling them to within a quarter inch from the top.
Step 12
Use a clean knife or thin spatula to gently release any trapped air bubbles by running it around the inside of the jars.
Step 13
Wipe the rims with a damp paper towel to ensure a clean seal, then place the lids on top and screw the rings on tightly.
Step 14
Prepare a large stockpot by placing a rack at the bottom and filling it halfway with water.
Step 15
Bring the water to a boil, then lower the jars into the pot using a holder, ensuring they are spaced two inches apart.
Step 16
If needed, add more boiling water to cover the jars by at least one inch.
Step 17
Bring the water back to a rolling boil, cover the pot, and process the jars for ten minutes.
Step 18
After processing, carefully remove the jars from the stockpot and let them rest several inches apart for twelve to twenty-four hours.
Step 19
Press the center of each lid to check for a proper seal; it should not move up or down.
Step 20
Once cooled, remove the rings for storage and keep the jars in a cool, dark place, ready to enjoy your homemade relish whenever the craving strikes.
