Cooking Instructions
Follow our step-by-step guide on how to make Honey Mustard Chicken Sheet Pan Dinner with Potatoes and Corn Side Dish.
Step 1
Preheat your oven to 375ยฐF (190ยฐC).
Step 2
In a resealable plastic bag, combine the potato wedges, olive oil, and seasoned salt. Seal the bag and shake to coat the potatoes evenly. Spread the potatoes on one third of a sheet pan.
Step 3
In a mixing bowl, combine the frozen corn, chopped onion, and melted butter. Stir until the butter is well mixed in. Spray the other side of the sheet pan with cooking spray and add the corn mixture, leaving space for the chicken breasts.
Step 4
Bake the potatoes and corn in the preheated oven for 15 minutes.
Step 5
While the vegetables are baking, season the chicken breasts with salt and pepper on both sides. In a separate bowl, mix together the mayonnaise, Dijon mustard, and honey. Place the seasoned bread crumbs in another bowl. Dip each chicken breast into the honey mustard mixture, then dredge in the bread crumbs until fully coated.
Step 6
After 15 minutes, remove the sheet pan from the oven. Toss the corn mixture and flip the potatoes to ensure even cooking. Spray the center of the pan with cooking spray and place the breaded chicken breasts in the empty space.
Step 7
Return the sheet pan to the oven and continue baking until the chicken is cooked through and no longer pink in the center, about 20 minutes.
