Step 1
Start by gathering your ingredients and placing the warm water, sugar, softened butter, honey, bread flour, whole wheat flour, vital wheat gluten (if using), cocoa powder, instant coffee granules, salt, and yeast into the bread machine pan. Follow the manufacturer's instructions for the order of ingredients, and set the machine to the dough setting. Let it work its magic until the cycle is complete.
Step 2
Once the dough is ready, carefully remove the bread pan from the machine. To help the dough rise, place the pan into a bowl of warm water (around 90 degrees F) and cover it with a towel. Allow it to rise until it doubles in size, which should take about an hour.

After the dough has risen, turn it out onto a floured surface. Gently punch it down to release any air bubbles, then divide it into 12 equal pieces for rolls or 3 pieces for small loaves. Shape each piece into a ball, and line a baking sheet with parchment paper.
