Step 1
Set your Instant Pot® to the 'Sauté' function. Add the butter and olive oil, allowing the butter to melt completely.
Step 2
Once melted, add the diced shallot, lemon zest, and minced garlic. Sauté for 1 to 2 minutes until the garlic becomes translucent.
Step 3
Stir in the Israeli couscous and continue to cook, stirring occasionally, until the couscous is lightly browned and toasted, about 2 minutes. Turn off the 'Sauté' function.
Step 4
Pour in the low-sodium chicken broth and fresh lemon juice. Close and lock the lid of the Instant Pot®.
Step 5
Select 'High Pressure' and set the timer for 5 minutes. Allow 10 to 15 minutes for the pressure to build up.
Step 6
Once the cooking time is complete, carefully release the pressure using the quick-release method as per the manufacturer's instructions, which should take about 5 minutes. Unlock and remove the lid.
Step 7
Gently stir in the capers and caper brine, mixing well to combine all the flavors.
Step 8
Serve the couscous garnished with chopped fresh parsley and grated Parmesan cheese. Accompany with lemon wedges for an extra burst of flavor.
