Begin by preheating your oven to a sizzling 450°F (230°C).

Next, take a large rimmed baking sheet and arrange the beef bones in a single layer.

Roast them in the oven for approximately 40 minutes, turning them halfway through to achieve a beautiful browning and a hint of char.

Once roasted, transfer the bones to an 8-quart Instant Pot.

Add in the chopped carrots, onion, halved garlic, apple cider vinegar, and bay leaves, then pour in enough water to fully submerge the ingredients.

Activate the Sauté function on the Instant Pot and bring the mixture to a gentle boil, leaving it uncovered for about 20 minutes.

As it simmers, skim off any foam or impurities that rise to the surface and discard them.

Introduce the peppercorns, coriander seeds, and cloves, then cancel the Sauté function.
