Step 1
Set your Instant Pot to the 'Sauté' function and heat the vegetable oil in the inner pot.
Step 2
Add the diced tomatillos, tomato, onion, and minced garlic to the pot. Sauté for about 5 to 7 minutes, stirring occasionally, until the tomatillos and onion are browned.

Pour in the mole sauce and optional chicken broth, stirring to combine. Place the chicken breasts into the sauce, ensuring they are submerged but not mixed in.

Turn off the 'Sauté' function. Close and lock the Instant Pot lid, sealing the vent. Set to high pressure for 10 minutes according to the manufacturer's instructions. Allow 10 to 15 minutes for the pressure to build.

Once the cooking time is complete, use the natural release method to release pressure for 15 to 20 minutes. Unlock and remove the lid carefully.

Transfer the cooked chicken breasts to a bowl and shred them using two forks. Pour the mole sauce mixture over the shredded chicken and mix well.
