Begin by rinsing the brown basmati rice and whole green mung beans under cold water to remove any impurities.

Soak them in fresh water for 15 minutes, then add the split yellow dal to the mix and let it soak for another 15 minutes.

After soaking, drain the mixture and set it aside.

Next, power up your Instant Pot and select the Sauté function.

Add 2 tablespoons of ghee and allow it to heat until shimmering.

Once hot, toss in the cumin and mustard seeds, sautéing them for about 2 minutes until they release their aromatic fragrance.

Introduce the sliced shallot and minced ginger to the pot, cooking until the shallot softens and turns translucent, which should take around 5 minutes.

Now, stir in the drained rice and legumes, ensuring they are well combined.

Turn off the Sauté function.

Sprinkle in the goda masala, ground turmeric, ground black pepper, and salt, then pour in the water, stirring everything together until evenly mixed.

Select the high-pressure setting and set the timer for 18 minutes, allowing 10 to 15 minutes for the pressure to build.

Once the timer goes off, let the pressure release naturally for 15 minutes, then manually release any remaining pressure, which may take an additional 5 to 10 minutes.

Carefully open the lid and give the khichdi a gentle stir.
