Step 1
Place the chopped peaches in the Instant Pot and sprinkle them evenly with the brown sugar. Allow the mixture to sit for about 10 minutes to let the flavors meld.

Stir in the fresh lemon juice, water, and a pinch of ground cinnamon until well combined.

Close and lock the lid of the Instant Pot. Select the high-pressure setting and set the timer for 1 minute. It will take about 6 to 10 minutes for the pressure to build up.

Once the cooking time is complete, allow the pressure to release naturally for about 10 minutes. After that, carefully use the quick-release method to release any remaining pressure, which should take about 5 minutes. Unlock and remove the lid.

Select the Saute function on the Instant Pot. Stir the mixture, using a spoon to smash the peach chunks until you achieve a thick, chunky consistency, which should take about 2 minutes. Press Cancel to stop the Saute function.
