Step 1
Season the pork loin generously with salt and black pepper. In a small bowl, combine the chili powder, ground cumin, and onion powder. Rub this spice mixture all over the pork loin.
Step 2
Set your Instant Pot to the 'Sauté' function and heat the olive oil until hot. If necessary, cut the pork loin in half to fit into the pot. Sear the pork on all sides until browned, about 5 minutes total. Remove the pork from the pot and set aside.
Step 3
Pour the beer into the pot, using a wooden spoon to scrape up any browned bits from the bottom. Return the pork loin to the pot and place the bay leaves on top.
