Step 1
Turn on the Instant Pot and select the Sauté function. Add the olive oil and let it heat for about 1 minute.
Step 2
Sear the venison roast in the hot oil for 2 minutes on one side, then flip it over and sear for an additional 2 minutes. Cancel the Sauté mode.
Step 3
In a small bowl, combine the water and beef stew seasoning mix, whisking until the seasoning is fully dissolved. Pour this mixture over the seared roast in the pot.
Step 4
Close and lock the lid of the Instant Pot. Select High Pressure according to the manufacturer's instructions and set the timer for 120 minutes. Allow about 10 minutes for the pressure to build.
Step 5
Once the cooking time is complete, carefully release the pressure using the quick-release method as per the manufacturer's instructions, which should take about 5 minutes.

Add the halved baby potatoes and baby carrots to the pot, spooning some of the sauce over them to coat.

Close and lock the lid again. Select High Pressure and set the timer for 10 minutes. Allow another 10 minutes for the pressure to build.

After the cooking time is up, use the natural-release method to release the pressure, which will take about 15 minutes. Season the dish with salt and ground black pepper to taste before serving.
