Step 1
Preheat your oven to 375°F (191°C) and line a cookie sheet with parchment paper.

In a medium bowl, combine the all-purpose flour, whole wheat pastry flour, rolled oats, sugar, baking powder, baking soda, and kosher salt.

In a separate small bowl, mix together the buttermilk and melted butter until well combined.

Create a small well in the center of the dry ingredients and pour in the buttermilk-butter mixture. Stir with a wooden spoon until the mixture is just combined.
