Step 1
Start by greasing an 8-inch square baking pan and lining it with two pieces of parchment paper, each about 14 inches long. Let the ends hang over the sides of the pan; this will make it easier to lift the fudge out later.
Step 2
In a heavy saucepan, combine the evaporated milk, light brown sugar, granulated sugar, unsalted butter, and salt. Stir the mixture over medium heat until it transforms into a thick, smooth syrup. This is where the magic begins!
Step 3
Once the mixture reaches a boil, reduce the heat to medium-low. Keep an eye on it and cook until a candy thermometer inserted into the center reads 238ยฐF (112ยฐC). This process will take about 20 to 30 minutes, so stir often and watch as the temperature rises slowly at first, then picks up speed. Patience is key!
Step 4
After reaching the desired temperature, remove the saucepan from the heat. Stir in the Irish cream liqueur and vanilla extract until everything is well combined. The aroma will be heavenly!

Next, transfer the mixture to the bowl of a large stand mixer fitted with beaters. Set the mixer to low speed and gradually mix in the sifted confectioners' sugar in three additions.
