Step 1
Start by preheating your oven to 375°F (190°C) and greasing a 9x13-inch baking dish to ensure your bars come out easily. In a large mixing bowl, whisk together the flour and salt. Next, cut in the softened butter using a knife or pastry blender until the mixture resembles coarse crumbs. In a liquid measuring cup, whisk the egg yolks and then add enough milk to reach a total of 2/3 cup. Gradually stir this mixture into the flour until it’s just moistened. Turn the dough out onto a lightly floured surface and knead it briefly. Roll out about half of the dough to fit the bottom of your prepared baking dish, then place it in the dish. Sprinkle the rolled oats evenly over the crust, and set aside the remaining dough for the top crust.
Step 2
For the filling, mix the cornstarch and lemon juice in a large skillet until smooth. Add the sliced apples, white sugar, brown sugar, cinnamon, and nutmeg, and cook over medium heat until the apples are tender, which should take about 15 minutes. Once done, remove from heat and let it cool slightly. Spread the apple filling evenly over the oats in the baking dish, then roll out the top crust and place it over the filling. Pinch the edges to seal the crusts and brush the top with the beaten egg white. Don’t forget to cut a few slits in the top crust to allow steam to escape!
Step 3
Bake in your preheated oven for about 50 minutes, or until the crust is golden brown and the filling has thickened beautifully. While your pie bars are baking, prepare the glaze by mixing the confectioners' sugar with 1 tablespoon of milk in a small bowl. Stir in the almond extract for that extra touch of flavor. Once the pie is out of the oven, drizzle the glaze over the warm bars. For a finishing touch, mix 1 teaspoon of sugar with 1/2 teaspoon of cinnamon and sprinkle it over the glaze.
