Step 1
Preheat your oven to 425ยฐF (220ยฐC) and arrange two racks in the middle and upper thirds of the oven. Line two 10x15-inch baking pans with foil for easy cleanup.
Step 2
In a large bowl, combine the red, yellow, orange, and green bell peppers, sweet onion, and grape tomatoes. Drizzle with 1 tablespoon of olive oil, balsamic vinegar, Italian seasoning, 1/8 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss until the vegetables are well coated, then transfer them to one of the prepared baking pans.
Step 3
Roast the vegetables in the preheated oven for 30 minutes, stirring halfway through for even cooking.
Step 4
While the vegetables are roasting, drizzle the baguette slices with the remaining olive oil and sprinkle with the remaining salt and black pepper. Arrange the bread on the second prepared baking pan.
Step 5
After 30 minutes, remove the vegetable pan from the oven. Push the roasted vegetables to one side of the pan and add the sliced Italian chicken sausage to the empty side.
Step 6
Return the pan to the oven and roast for an additional 10 to 15 minutes, until the sausage is heated through and the vegetables are tender. In the last 5 minutes of roasting, add the pan with the baguette slices to the oven to toast them.
Step 7
Once done, remove from the oven and sprinkle the roasted vegetables and sausage with fresh oregano. Serve warm with the toasted baguette slices.
