Step 1
In a heavy saucepan, combine the milk and whipping cream. Heat over high heat until it reaches a boil, whisking occasionally.

Once boiling, gradually whisk in the cornmeal in a steady stream. Continue whisking vigorously for about 1 minute to fully incorporate the cornmeal. Remove from heat and let it cool to room temperature.
Step 3
Transfer the cooled cornmeal mixture to the bowl of a stand mixer fitted with a paddle attachment. Add the beaten eggs, 2 tablespoons of butter, sugar, baking powder, and salt. Mix on medium speed until the mixture is uniform and aerated, about 15 minutes.

Gently fold in the corn by hand until evenly distributed.

Preheat your oven to 375ยฐF (190ยฐC).
