Step 1
Preheat your oven to 375°F (190°C).
Step 2
In a large skillet, heat over medium heat and spray with vegetable cooking spray. Add the diced chicken, cumin, and coriander, cooking until the chicken is fully cooked. Transfer the chicken to a medium bowl.

Stir in the chopped cilantro, black beans, and green chile peppers into the chicken mixture.

Spread half of the enchilada sauce evenly over the bottom of an 11x7 inch baking dish. Place 4 corn tortillas over the sauce, overlapping them if necessary.
