Cooking Instructions
Follow our step-by-step guide on how to make Layered Chicken Enchilada Stacks.
Step 1
Preheat your oven to 350ยฐF (175ยฐC) and lightly grease a round baking dish with cooking spray.
Step 2
In a large mixing bowl, combine the shredded chicken, cream of chicken soup, cream of mushroom soup, chopped green chiles, finely chopped onion, and taco seasoning. Mix well and set aside.
Step 3
Place one warmed tortilla in the bottom of the prepared baking dish. Spread 1/3 cup of the chicken mixture over the tortilla, then sprinkle with some shredded Cheddar cheese. Repeat this layering process with the remaining tortillas, chicken mixture, and cheese, finishing with a layer of cheese on top.
Step 4
Bake the enchilada stacks in the preheated oven, uncovered, for about 30 minutes, or until heated through and the cheese is bubbly and golden.
