Cooking Instructions
Follow our step-by-step guide on how to make Lemon Bubble Loaf.
Step 1
In a large bowl of a stand mixer fitted with the paddle attachment, combine 2 cups of flour, 1/2 cup of sugar, yeast, and salt.
Step 2
In a medium saucepan, heat the milk, water, and 4 tablespoons of butter over low heat until warm to the touch. Pour this mixture into the flour mixture and beat on low speed until just combined. Increase the speed to medium, add the eggs, and beat for 2 minutes, scraping the sides of the bowl occasionally.
Step 3
Gradually stir in up to 2 more cups of flour, mixing until a soft dough forms. Turn the dough onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. The dough will be very sticky; use a scraper and add remaining flour only as needed. Shape the dough into a ball and place it in a large greased bowl, turning to coat. Cover with a towel and let rise in a warm, draft-free place until doubled in volume, about 1 hour.
Step 4
Once risen, punch down the dough starting from the center and pushing in the edges. Transfer the dough onto a lightly floured surface and cut it in half. Cover with a bowl and let it rest for 15 minutes.
Step 5
Meanwhile, in a small bowl, combine the remaining 1/2 cup of sugar, lemon zest, and mace. Melt 2 tablespoons of butter in a small pan and grease a 10-inch fluted tube pan with cooking spray.
Step 6
Cut each half of the dough into 16 pieces. Shape each piece into a ball by tucking the ends under. Dip the tops in the melted butter and place half of the balls in the tube pan, sprinkling with half of the lemon mixture. Repeat with the remaining dough balls, butter, and lemon mixture. Cover with a towel and let rise in a warm place until doubled, about 45 minutes.
Step 7
Preheat the oven to 350ยฐF (175ยฐC). Place the tube pan on a cookie sheet and bake in the preheated oven until the bread is golden and sounds hollow when lightly tapped, about 35 minutes. Cool in the pan for 5 minutes before removing and letting cool on a wire rack.
