Cooking Instructions
Follow our step-by-step guide on how to make Lemon-Cream Cheese Glazed Cookies.
Step 1
Preheat your oven to 350ยฐF (175ยฐC) and line a cookie sheet with parchment paper.
Step 2
In a medium bowl, sift together the cake flour, all-purpose flour, baking powder, and salt.
Step 3
In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, cream cheese, white sugar, and powdered sugar. Beat on medium speed until the mixture is light and fluffy, about 4 to 5 minutes.
Step 4
Add the egg and egg yolk to the mixture, mixing until fully incorporated. Then, add the lemon juice, lemon zest, and vanilla extract, mixing until combined.
Step 5
Gradually add the flour mixture to the wet ingredients, mixing until just incorporated. The dough will be thick and sticky.
Step 6
Using a small cookie scoop, drop dough onto the prepared baking sheet, spacing them about 1 inch apart.
Step 7
Bake in the preheated oven for about 11 minutes, or until the edges are golden. Allow the cookies to cool on the baking sheet for 1 minute before transferring them to a wire rack to cool completely.
Step 8
While the cookies are baking, prepare the glaze by whisking together cream cheese, milk, lemon juice, and lemon zest in a small bowl until smooth. Gradually whisk in powdered sugar until the glaze reaches a runny consistency.
Step 9
Once the cookies are cool, hold each cookie upside down and dip it into the glaze, twisting to coat. Shake off any excess glaze and place the cookie upright on a cooling rack. Repeat with the remaining cookies.
