Cooking Instructions
Follow our step-by-step guide on how to make Lemon Lavender Cupcakes.
Step 1
Preheat your oven to 350°F (175°C) and line a 12-cup cupcake tin with cupcake liners.
Step 2
In a mixing bowl, whisk together the flour, chopped lavender, baking powder, and salt. Set this mixture aside.
Step 3
In another bowl, use an electric mixer to beat the sugar and cubed butter together on medium speed until the mixture is light and fluffy, which should take about 3 minutes. Then, mix in the beaten egg, lemon juice, and lemon zest until well combined.
Step 4
Gradually add 1/3 of the flour mixture to the lemon mixture, mixing until just combined. Then, add 1/4 cup of buttermilk and mix again. Repeat this process by adding another 1/3 of the flour mixture, followed by the remaining buttermilk, and finally the last of the flour mixture. Stir until everything is well combined.
Step 5
Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
Step 6
Bake in the preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Step 7
For the glaze, mix confectioners' sugar with lemon juice in a bowl until smooth. Stir in lemon zest. Drizzle this glaze over the cooled cupcakes and garnish with a sprinkle of lavender.
