Step 1
In a saucepan, combine the water and sugar over medium-high heat. Stir until the sugar dissolves and the mixture comes to a boil. Remove from heat and let it cool.

In a pie plate, mix the pureed pomelo and freshly squeezed lemon juice. Add the lemon zest and the cooled sugar syrup, stirring until well combined.
Step 3
Place the pie plate in the freezer uncovered. After about 45 minutes, check the mixture; it should start to freeze around the edges but remain slushy in the center. Use a fork to scrape the frozen edges into the center.
Step 4
Return the pie plate to the freezer. Continue to scrape the mixture with a fork every hour until the granita is light and fluffy, which may take several hours.
