Step 1
Preheat your oven to 350°F (175°C) and grease 36 mini muffin cups.
Step 2
In a mixing bowl, combine the white sugar with 2 tablespoons plus 1 teaspoon of lemon zest. Use your fingers to rub the zest into the sugar until it becomes moist and fragrant.

Add the softened butter to the sugar mixture and beat with an electric mixer until creamy.

Incorporate the egg and mix well until fully combined.

Gradually add the all-purpose flour, baking soda, and salt, mixing until just incorporated.
