Cooking Instructions
Follow our step-by-step guide on how to make Lemon Raspberry Crumb Bars.
Step 1
Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan.
Step 2
In a mixing bowl, combine the melted butter, white sugar, and light brown sugar. Stir until well blended.
Step 3
Gradually add the all-purpose flour to the mixture, stirring until it forms a crumbly texture. Set aside 3/4 cup of this mixture for the topping.
Step 4
To the remaining crumb mixture, add the raspberry baking chips and salt, mixing well.
Step 5
Press the crumb mixture evenly into the bottom of the prepared baking pan to form a crust.
Step 6
Spread the lemon curd evenly over the crust, then sprinkle the reserved crumb mixture on top.
Step 7
Bake in the preheated oven for 35 to 40 minutes, or until the top is golden brown.
Step 8
Allow the bars to cool in the pan for 20 minutes, then refrigerate for about 1 hour until set.
Step 9
While the bars are cooling, prepare the raspberry sauce by microwaving the raspberry preserves in a microwave-safe bowl for about 40 seconds, or until easily stirred. Stir in the raspberry liqueur and refrigerate until cool.
Step 10
Once set, cut the bars into 9 pieces and drizzle with the raspberry sauce before serving.
