Cooking Instructions
Follow our step-by-step guide on how to make Lime Avocado Rosemary Bars.
Step 1
Start by preheating your oven to 350°F (175°C). Grab a 9x13-inch baking dish and grease it well to ensure your bars come out easily later on.
Step 2
In a mixing bowl, combine the flour, 1/2 cup of sugar, minced rosemary, and the zest of the limes. This fragrant mixture will be the base of your bars. Cut in the softened butter using a pastry cutter or your fingers until the mixture resembles small clumps. Set aside 1 cup of this mixture for later; you'll need it for the topping.
Step 3
Press the remaining flour mixture evenly into the bottom of your prepared baking dish. This will form a lovely crust for your bars. Pop it in the oven and bake for about 10 minutes, or until the crust is set and lightly golden.
Step 4
While the crust is baking, prepare the filling. In another bowl, mix the reserved 1/2 cup of flour mixture with 1 1/2 cups of sugar, the juice of the limes, the eggs, and the mashed avocado. Stir until the mixture is mostly smooth; a few lumps are okay! Spread this vibrant filling over the baked crust, and then sprinkle the remaining flour mixture on top for a delightful crunch.
Step 5
Return the dish to the oven and bake for an additional 25 minutes, or until the filling is set. Once done, let the bars cool completely in the dish before cutting them into 48 squares. For the best flavor, cover them with plastic wrap and refrigerate for a while before serving.
