Pat the chicken thighs dry with a paper towel and cut them into 1 1/2-inch chunks. Sprinkle the chicken pieces with salt.

In a bowl, combine mayonnaise, lime zest, grated ginger, salt, and black pepper. Stir until the marinade is smooth.
