Cooking Instructions
Follow our step-by-step guide on how to make Lime White Chocolate Coconut Cookies.
Step 1
Preheat your oven to 375°F (190°C) and lightly spray two cookie sheets with cooking spray.
Step 2
In a mixing bowl, combine the softened butter, brown sugar, white sugar, and beaten egg. Use a wooden spoon to mix until well combined.
Step 3
Grate the zest of the lime into the mixture and stir in 1/2 to 3/4 teaspoon of lime juice for added flavor.
Step 4
In a separate bowl, whisk together the all-purpose flour, white chocolate chips, baking soda, and a pinch of salt.
Step 5
Gradually mix the dry ingredients into the butter mixture until a stiff dough forms. Gently fold in 1 cup of the shredded coconut.
Step 6
On a flat dish, spread the remaining shredded coconut. Roll the dough into ping pong ball-sized balls and then roll each ball in the coconut to coat.
Step 7
Place the coconut-coated dough balls on the prepared cookie sheets, leaving space between them as they will spread while baking.
Step 8
Bake in the preheated oven for about 10 minutes, or until the edges are lightly browned. Allow to cool slightly before transferring to a wire rack.
