Step 1
Preheat your oven to 350°F (175°C) and lightly coat three cookie sheets with cooking spray.

In a small, shallow bowl, place the white sugar for rolling the cookies.

In a large mixing bowl, combine the dark brown sugar, canola oil, dark molasses, and egg. Beat the mixture with an electric mixer until well blended.

In a separate bowl, stir together the all-purpose flour, baking soda, ground ginger, freshly grated ginger, ground cloves, salt, and cayenne pepper (if using).

Gradually add the flour mixture to the molasses-egg mixture, blending well until a thick dough forms. You can refrigerate the dough at this point if desired.
