Cooking Instructions
Follow our step-by-step guide on how to make Make-Ahead Slow Cooker Creamy Mashed Potatoes.
Step 1
Start by peeling your potatoes and placing them in a large pot.
Step 2
Cover them with water and bring it to a vigorous boil over high heat.
Step 3
Once boiling, reduce the heat to medium-low and let the potatoes simmer until they’re tender, which should take about 20 to 25 minutes.
Step 4
After they’re cooked, drain the potatoes and return them to the pot.
Step 5
To help them dry out a bit, stir them gently over medium heat for 1 to 2 minutes.
Step 6
Now it’s time to get creamy! Using a hand mixer, mash the potatoes until they’re smooth and fluffy.
Step 7
Then, add in the softened cream cheese, half-and-half, chopped chives if you’re using them, beaten egg whites, onion powder, salt, and pepper.
Step 8
Mix everything together until it’s well combined and has a delightful creamy texture.
Step 9
Next, prepare your slow cooker by spraying the insert with nonstick cooking spray.
Step 10
Carefully transfer the mashed potatoes into the slow cooker.
Step 11
Cut 1/2 cup of butter into eight pieces and scatter them over the top of the potatoes.
Step 12
Allow the mixture to cool, then cover it with the lid and pop it in the refrigerator overnight or until you’re ready to reheat.
Step 13
When it’s time to serve, take the potatoes out of the fridge and let them sit at room temperature for about 3 and a half hours.
Step 14
To keep your potatoes from getting too watery, place a towel under the lid of the slow cooker to catch any condensation.
Step 15
Set your slow cooker to the Low setting and let the potatoes cook for 2 and a half hours, stirring once or twice to ensure even heating.
Step 16
As they cook, gradually stir in the remaining 1/4 cup of butter, adding it one tablespoon at a time, and continue cooking for an additional 30 minutes.
Step 17
Your creamy, buttery mashed potatoes will be ready to impress your family and friends! Enjoy every delicious bite!.
