Step 1
In a large pot, place the chicken breasts and cover them with water. Bring to a boil, then reduce the heat to medium-low and let it simmer for about 30 minutes, or until the chicken is cooked through. Remove the chicken from the pot and let it cool before shredding it into bite-sized pieces.
Step 2
In the same pot, heat the canola oil over medium heat. Add the chopped onion, diced Anaheim pepper, diced jalapeno, and minced garlic. Cook for about 8 minutes, stirring occasionally, until the vegetables are softened and fragrant.
Step 3
Stir in the shredded chicken, chicken stock, whole plum tomatoes (with their juice), tomato sauce, diced mango, lime juice, lime zest, and chopped cilantro. Season with Pasilla chili powder, ground cumin, sea salt, black pepper, sugar, and ground cinnamon. Bring the mixture to a boil, then reduce the heat to low and let it simmer for at least 45 minutes, allowing the flavors to meld and the filling to thicken.
